I Salti restaurant, Corsica

The first impression that grabs you when you arrive at the I Salti restaurant is the douceur de vie that prevails there. Hidden in Balagne, in the  Reginu valley of Haute-Corse (not far from L’Île-Rousse), this table d’hote, with an authentique mill from the previous century, is pleasantly managed by Carina Canioni and David Doury.

The menu changes daily depending on the chef but also depending on the products available from farmers in the region and the catch of the day. All dishes are from the French gastronomy while respecting local and diversified supply.

This meeting between a Norseman and a Corsican has given an alchemy particular to this place:  softness, warmth and mastery of the art of cooking . In the shade of trees for lunch or on the terrace for dinner, enjoy this moment of pleasure when time seems to be yours.

That little extra: The Corsican cheese proposed on the menu is matured for almost 20 months … Unique sensation for your taste buds, you will feel the expertise of master cheesemakers from the Isle of Beauty. Nonetheless, leave some room for dessert….
