The first impression that grabs you when you arrive at the I Salti restaurant is the douceur de vie that prevails there. Hidden in Balagne, in the Reginu valley of Haute-Corse (not far from L’Île-Rousse), this table d’hote, with an authentique mill from the previous century, is pleasantly managed by Carina Canioni and David Doury.
The menu changes daily depending on the chef but also depending on the products available from farmers in the region and the catch of the day. All dishes are from the French gastronomy while respecting local and diversified supply.
